Eezy Speedy Pan-fried Fish

Dab fish fillets (fresh or frozen) on paper towel to ensure they are completely dry. Season about a cup of flour in a flat dish. Press fish fillets firmly onto the flour mixture one by one, turning them over to cover both sides.  Heat about two tablespoons of olive oil in your non-stick frying pan and fry the fish fillets on both sides, using medium to high heat.  Make sure they start to brown before you turn them over to fry on the other side.  Sprinkle lemon juice and black pepper over the fish while still in the pan just before serving.  Serve with oven chips, steamed green beans with mushroom & garlic topping, and green salad.
