Beat one egg with 2 tablespoons (25ml) milk , 2 tablespoons sugar, 2 tablespoons oil or melted butter and a pinch of salt. Add 1 cup (250 ml) of sugar and mix lightly. If you have two ripe bananas double the ingredients. Pour into small greased muffin pans and cook for about 15 minutes. Delicious as a teatime snack or even for lunch. Even more tasty on the second day.
